BASIC IDLI

INGREDIENTS:
2  cups parboiled rice
1  cup  urad dal
Salt to taste

METHOD:
  • Pick, wash and soak dal and rice separately.
  • Grind dal without adding water till it is very fine.
  • Grind rice, adding little water. Mix well together dal and rice, add salt and leave to ferment overnight.
  • When the mixture doubled in size, greeze idli moulds, pour the batter and steam for 8-10 minutes or till they are done. Use as desired for fusion cooking.
Note: Deep-fried and sliced idlis make a tasty cocktail. Snack with mint leaves or tomato chutney.
